Mulled wine poached pear 🍐🍷

INGREDIENTS:

(Mulled wine)
1 bottle red wine
250g caster sugar
4 star anise
Juice of 1 lemon
Juice from 1 orange
1 table spoon ground cinnamon
7 pimento pepper

8 conference pears

(Chantilly cream)
250ml double cream
Vanilla bean paste
Sweeten to taste

(Smoked almond praline)
150gSmoked almonds
200g Caster sugar
Squeeze of lemon juice

RECIPE:

• Start by adding all ingredients for mulled wine into a sauce pan & bring to a boil and reduce heat to a gentle simmer.
•Next peel your 8 pears and trim any stalks ect. Then add them to you pot of mulled wine.
•While your pears are poaching begin to make your Chantilly cream by whipping your double cream along with your vanilla pasta & sugar (add sugar to desired sweetness). I like mine slightly less sweet as the praline will be a sweet element to this dessert.
• After your cream is made - start your almond praline by adding caster sugar and a splash of water to a sauce pan (this will help your sugar evenly caramelise).
•When your caramel reaches a light golden brown colour, add a squeeze of lemon juice & pour on top of your smoked almonds using a metal tray.
•Allow this to cool at room temperature before breaking into small pieces.
•When your pears are just soft throughout & your mulled wine has reduced slightly, turn of the heat and let your pear soak in your mulled wine. (They should be looking bright and glossy at this point).
•Then begin to assemble by spreading your Chantilly cream on a plate, top with your poached pear and crumble your smoked almond praline on top. Then finish by drizzling the mulled wine all over.
